The Pocono Food Truck Company LLC was built on a lifetime of culinary experience, a dash of community spirit, and a taste of tradition. After years working as an executive chef in Philadelphia and Atlantic City, Chef Shawn stepped away from the restaurant world to raise his kids and later worked as a letter carrier. There, food became a daily ritual — every occasion was an excuse to share a meal, and coworkers became his test kitchen. Through those moments, he discovered which flavors truly resonated: bold, comforting, and unforgettable tastes that most people had never experienced before.
Our history
The Pocono Food Truck Company LLC grew out of two worlds that defined me—professional kitchens and everyday community life. I spent years as an executive chef in high-pressure restaurants in Philadelphia and Atlantic City, sharpening my craft and building a reputation for creativity and precision. But when I stepped away from that industry to raise my kids, I found myself working as a letter carrier, delivering mail day after day through neighborhoods where camaraderie was as common as conversation. My coworkers and I needed no excuse to bring in food; a birthday, a sports win, or just a Tuesday was enough reason to share a spread. That’s when I started experimenting, using them as my test subjects. I paid close attention to what they loved most—not just what was good, but what was unforgettable, the flavors they had never truly experienced before.
Those experiments reconnected me with my culinary roots and with memories of my grandparents’ home in Niagara Falls, where every summer I was introduced to the distinctive tradition of Beef on Weck. That sandwich became the foundation of my brand, a taste of heritage and authenticity I knew could stand out anywhere. My philosophy remains simple: food should be fresh, honest, and prepared with care. From oven-roasted beef carved on site, to rolls baked fresh, to condiments crafted from real ingredients, I believe in giving people more than a meal—I give them an experience.
