The first impression is apple cider vinegar brightness — clean, assertive, and palate-opening. Then dark molasses rolls in, adding body and subtle bitterness rather than sweetness. The fermented red pepper backbone keeps the sauce layered and alive. Roasted garlic and cracked black pepper add backbone.
